```3 Tbls Lemon Olive Oil
2 Tbls Lemon Balsamic
1 lb raw shrimp peeled
2 tsp dried oregano
1/2 yellow onion diced
1 minced garlic cloves
1 1/2 cups dried orzo
3 cups stock
1 cup cherry tomatoes
3/4 cup frozen peas fresh lemon and oregano
- Quick saute of the shrimp in the Lemon Olive Oil. Season generously with salt and Pepper. Remove shrimp and set aside, add a little more olive oil if needed and saute onions and garlic in the same pan.
- Now stir in the dried orzo and let it toast for one minute to infuse it with flavor.
- Add broth, stir well and increase the heat until the liquid comes to a boil.
