Homemade Pappardelle

Ingredients:1 1/2 cup unbleached all purpose flour1/2 cup semolina flour3 large, fresh eggs1 tablespoon Arbequina IOO346a pinch of sea salt Products You Will Need: Cooking Instructions: Pulse the dry ingredients in the food processor, add the eggs and pulse until a ball forms. Knead for about a minute until the ball becomes smooth. wrap in plastic or cover with a bowl and allow to the dough to relax for an hour. divide the dough dish into 8 equal pieces and run them through your pasta machine through setting #6. Cut the sheets in to pappardelle sized noodles and arrange on racks or dust with flour to prevent sticking. Cooking Time : 20-30 Min Servings : 4-6

Chevre Ravioli

Ingredients:2 egg, beaten1 teaspoon salt2 cups all-purpose flour1/4 cup water Use one of the following:Amphora House BlendAustralian Hojiblanca Cooking Instructions:In a medium sized bowl, combine flour and salt. Make a well in the flour, add the slightly beaten egg, and mix. Mixture should form a stiff dough. If needed, stir in 1 to 2 tablespoons water. On a lightly floured surface, knead dough for about 3 to 4 minutes. With a pasta machine or out 12inch long sheets of dough to 1/8 inch thick, or the number 6 setting on a pasta machine. Cover sheets that are not being used with a towel so they do not dry out.Cooking Time : 1 - 1 1/2 hrs Servings : 6-8

Tomato and Mozzarella Salad

Ingredients:4 large fresh tomatoes. Or 12-14 cherry tomatoes.5 tablespoons Ultra Fresh Hojiblanca or Frantoio Extra virgin olive oil Dash of Salt and fresh ground pepper2 tablespoons of Amphoras Aged Fig or Traditional Balsamic vinegar14 leaves Basil sliced1 package of Fresh mozzarella cheese packed in water Products You Will Need:Traditional Style (Aged up to 18 years) Cooking Instructions:Thinly slice tomatoes and arrange around perimeter of plate.Slice mozzarella into silver dollars and place on each tomato. Top with a sprig of basilMix olive oil and balsamic vinegar. Pour over tomatoes. Add salt and pepper to taste serve. Cooking Time : 0 Servings : 4-6
